Shrewsbury born and bred Tom Holt from Paso-Primero has been making wines in Somontano, northern Spain for the last nine years. In that time his portfolio has exploded from a single, conventionally farmed, commercially produced wine to a series of wines made with passion, provenance, and purpose. His 'Paso-Project' has seen him re-establish forgotten vineyards and restore forgotten varietals, redefining what was thought possible in Somontano. This tasting will give you a chance to try the wines that have formed the backbone of this revolution. 

These tasting workshops are led by expert producers or chefs, touching on Slow Food principles, hear their story illustrated by food and drink. They all take place inside Ludlow Castle's Beacon Room which you enter via the Castle Garden area within Food Festival hours, or the Castle side door (right of main Castle entrance- look for the flag) for any out of hours workshops and the Slow Food Feast. All workshops last about an hour.
