Andy Link, Chef & Patron

Where:

Outer Bailey Demonstration Stage - Outer Bailey

When:

Andy is the award winning Chef/Patron, Gardener and Bee Keeper of the 2 AA Rosette 'Riverside Inn' at Aymestrey in Herefordshire.

Andy grew up on a small farm in Herefordshire, his earliest food memories are linked to those experiences of being out in nature with the animals and of being in the garden – digging new potatoes from the soil and picking peas and eating straight from the pod. He recalls foraging with all his family for blackberries in the autumn - that connection with the produce is what created his love of cooking.

The Riverside at Aymestrey's ethos is to source locally and responsibly, the dishes tend to aim to showcase their favourite artisan suppliers, and what is seasonal. The rural Herefordshire location, influences the style and content of the menus to reflect this region.

Andy regularly demonstrates his skills to up and coming youngsters with his ethos being that nothing is wasted in the kitchen, not just for financial reasons but out of respect for the animal and produce grown.

In 2017 Andy worked on a fantastic project in Mortimer Forest regarding the long haired Fallow Deer, which aren't found anywhere else in the world, and if you're a fan of 'Countryfile,' you'll have seen him on there flying the flag for Mutton.
